So far so good, I am not missing not having red meat.  I have adapted my recipes to make meals the whole family seems to enjoy.  The hard part I find is cutting down on the fat.  It is so hard to find foods that do not contain an over-abundance of fat.  I found some low-fat plain yogurt that I mix with pureed frozen berries, then freeze in empty applesauce cups, to make a nice cold snack on a hot day, or unfrozen as a pudding-like treat.  My dog liked it , so if she liked it, it has to be good. As part of my ongoing battle with high-cholesterol and high blood pressure and high creatinine levels I have changed to a low-fat diet.  I have a great cookbook for diabetics that I got from somewhere a few years ago and I decided to take a look in there for some recipe and meal ideas.  I found some really good ones that we have eaten and all the family thought they were great, so now I have something I can cook for everyone and we all will be better for it.
